Delivery to mainland Spain and the Balearic Islands

Frequently asked questions

What you ask us most about smoking dust, smoking, delivery and returns, answered briefly and clearly.

What is beech smoking dust?

Very finely ground beech wood. It smoulders without a flame and gives off a mild, clean smoke with a slightly sweet aroma, used to smoke fish, cheese, meat, sausages or vegetables. Ours is 100 % beech, untreated and free of additives, with a grain size of 0.5 to 1.0 mm.

What can I use it in?

Mainly in cold smoke generators (the metal mesh mazes), and also in smokehouses, smoking cabinets, smokers and lidded grills. For hot smoking, put it in a smoker box or a small foil tray over indirect heat.

What does grain size 500/1000 mean?

It describes the particle size: between 0.5 and 1.0 mm. It is the usual grain for cold smoke generators: fine enough to pack well and smoulder slowly, coarse enough to let air through so it does not go out.

How much smoking dust do I need?

A medium-sized cold smoke generator takes about 250 to 400 g and smokes for 8 to 12 hours, depending on its size, the draught and the humidity. A 1 kg bag is enough for about three fillings, the 5 kg bag for a whole smoking season.

What is the difference between cold and hot smoking?

In cold smoking the food is not cooked: the smoke stays below about 25 °C and works for hours or days, for example with salmon, cheese or cured ham. In hot smoking the food is smoked and cooked at the same time, at about 60 to 120 °C, for example trout, ribs or vegetables. Our smoking dust works for both.

Where can I use it safely?

Only outdoors or in a well-ventilated smoker or room, never inside your home or in enclosed spaces: smouldering dust produces carbon monoxide, an invisible and odourless gas. Never leave it unattended and keep children and pets away. All the safety advice is on the product page and on every bag.

How should I store it?

In a dry place, tightly closed, away from heat sources and out of the reach of children. Kept dry, smoking dust lasts a very long time. If it has got damp, spread it out in a dry place for a few hours before use.

Who packs the smoking dust?

We do, in Marratxí, Mallorca, in bags of 500 g, 1 kg and 5 kg. That is why we are named as the manufacturer on the bag and on the product page.
